Bollinger Champagne is the second largest independent Champagne House. It was founded in the Ay region of Champagne in the year 1829.
Bollinger La Cote aux Enfants 2015 is a blanc de noirs Champagne made exclusively from pinot noir. This extra brut Champagne has a dosage of 4 grams per liter. Fermentation takes place entirely in small old oak barrels. Formulation is entirely from a grand cru vineyard. 2015 resulted in the production of 3,300 bottles.
La Cote aux Enfants’ is a steep sided 4 hectare vineyard assembled by Jacques Bollinger between 1926 and 1934. It is planted in only pinot noir. Since 2012 the north-west facing slope provides the grapes for Bollinger La Cote aux Enfants Champagne. The vineyard is 100% Grand Cru (Aÿ: La Cote aux Enfants).
Nose: “Extremely fresh on the nose, which is full of bergamot and citrus fruits like lemon, clementine and orange. Later, fruity notes of Mirabelle plum and candied lemon bring a touch of sweetness and elegance.”
Palate: “The palate is defined by flavors of ripe quince and dried fruits, bringing an elegant texture. A very sophisticated structure supported by a lovely, lively acidity. The finish is long and saline, giving a lasting impression of depth and freshness.”
